Strawberry Ice Cream Sandwiches

Ingredients
- Sugar Cookies:
- 2 cups all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup cold solid vegetable shortening
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 tsp grated orange zest
- 3 Tblsp milk
- extra sugar for spinkling
- 3 cups strawberry ice cream, softened
Instructions
- Preheat oven to 375 degrees F. Sift the flour, baking powder, baking soda and salt together ino a medium bowl. In a standing mixer, cream the shortening and sugar. Beat in the egg, vanilla and almond extracts and orange zest. Alternately mix in the milk and dry ingredients, beginning and ending with dry ingredients.
- Roll the dough out to a ⅛" thickness between two sheets of wax paper, using flour if the dough is very sticky. Cut the dough into rounds using a 3" cookie cutter. Reroll and cut as necessary. You will need at least 12 cookies for the sandwiches, but should have extra. Sprinkle each cookie with a little sugar and bake on a greased cookie sheet for 12-14 minutes or until golden on the edges. Transfer to a rack and cool completely.
- For the sandwiches, let the ice cream soften a little or blend it briefly in the food processor. Place a cookie upside down and spoon ½ cup of ice cream on top. Place another cookie on top of the ice cream and press together slightly. Repeat until you have 6 ice cream sandwiches. Store in the freezer until ready to serve.
