Ingredients
- 2½ cups medium-grain white rice
- 2¾ cups cold water
Instructions
- Place the rice in a large bowl and cover with water. Let it stand for a few minutes. Stir, drain and repeat until the water is clear when stirred, 5 to 6 minutes.
- Using a 4-quart pot, bring the water to a rapid boil. Reduce the heat to lowest possible simmer, cover and allow it to cook undisturbed for 15 minutes.
- Do not uncover the pot.
- Remove the pot from the stove and let it sit, with the lid on for 20 minutes.
