Basil. Lemon. Grilling. One-Dish.
This recipe has it all and that’s why I love it so. It is a great excuse to use basil which is thriving this time of year. It is bright with lemon. It’s an excuse to fire up the grill. And it has the ease of a one-dish meal. (To make it even easier, skip the basting step.)

Lemony Tomato Basil Pasta with Grilled Chicken

Ingredients
- 4 chicken breasts, skinless & boneless
- 1 lb. penne pasta
- Marinade:
- ⅓ cup lemon juice
- 1½ Tblsp lemon zest
- 1 Tblsp honey
- ½ cup olive oil
- salt to taste
- For basting:
- ¼ cup lemon juice
- 1 Tblsp lemon zest
- 1 tsp honey
- ¼ cup olive oil
- salt to taste
- For the tomatoes:
- 2 cups cherry tomatoes, halved
- ½ cup fresh basil julienned
- juice of one lemon
- 2 tsp lemon zest
- ¼ cup olive oil
- salt & sugar to taste
Instructions
- Bring a large pot of water to boil. Combine the marinade ingredients. Place the chicken in a glass bowl and pour the marinade over it, allowing it to marinate while you prepare the rest of the dish.
- Combine the baste ingredients and set aside. Combine all of the ingredients for the tomato mixture and gently toss.
- Prepare the grill. Add the pasta to the pot of boiling water and cook according to the package directions. Grill the chicken breasts, basting frequently until done. Slice the chicken breasts. Drain the pasta.
- Toss the pasta with the grilled chicken and tomato mixture.
- Season to taste with salt and pepper, adding a touch of olive oil or lemon juice if necessary. Serve immediately.
