Originally Belgian, it is now the Germans who have the largest claim on Limburger. A cow’s milk cheese, it is butter colored with medium holes and an edible rind. The texture is soft like brie. The taste is creamy, and for me was not near as strong, tart or acidic as the smell. The elephants made their appearance at the finish. This is a good cheese to pair with a strong German beer. Or use it as your stinky cheese conversation piece for a cheese tasting.
