Lemon Almond Biscotti

Ingredients
- 4 eggs
- 1½ cup sugar
- 1 cup vegetable oil
- 3 tablespoons grated lemon zest
- 2½ teaspoons baking powder
- 2 teaspoons vanilla extract
- 2 teaspoons almond extract
- ½ teaspoon salt
- 4 cups all-purpose flour
- 2 cups sliced almonds
Instructions
- Preheat oven to 350 degrees F.
- With the paddle attachment of mixer, combine eggs, sugar, oil, zest, extracts and salt.
- Add the flour, baking powder and almonds and stir until the dough forms.
- Turn out onto a floured surface and knead until smooth.
- Make two logs and sprinkle the top with sugar.
- Bake about 30 minutes and let cool for 10 minutes.
- Slice into 10 pieces and bake again until crispy, about 20 minutes.
