Why is it that the hardest part of a race is when you see the finish line? Perhaps some folks are motivated by the finish line, but I am finding it quite challenging and downright exhausting to dig down deep for endurance. The “race” I’ve been running since July is a kitchen renovation, and it’s messing with my head.
But call off the head shrinks. My renovation fatigue was greatly improved by the delivery and installation of my Wolf 6 burner, double oven, dual fuel range with infrared griddle and charbroiler (grill). The cooks in this house are over the moon with this piece of equipment. So after the hood was attached and transitioned and the range appropriately seasoned, my kids were treated to pancakes on a Friday to try out the new griddle.
And I am thrilled about the infrared grill. I love the simplicity of grilled veggies and I can see that the grill is going to make it a breeze for my family to get more healthy veggies at mealtime.
One night last weekend, we even went vegetarian, a big deal for a family who has half of a rodeo pig in the freezer. We grilled grape tomatoes and red onions on skewers, and portobellos. I boiled some bow tie pasta and tossed everything with a bit of pesto I had on hand. I finished it with shredded parm and thin ribbons of basil. So easy and so healthy.
Now, if the remaining back orders will magically appear so we can wrap up this project. OK, I’ll settle for locating some baking pans amid the boxes so I can indulge in therapy with my new range.
